HOISIN PORK NOODLES + GREENS

My Hoisin Pork Noodles with Greens and Chilli Oil is a crowd pleaser that's done and dusted in under 30 minutes and feels just as satisfying as takeout!

HOISIN PORK NOODLES
500g pork mince
3 large garlic cloves, finely chopped
3 Tbsp peanut or sesame oil
2 ½ cakes of egg noodles
1 small broccoli, finely sliced into bite-size pieces
2 celery stalks, finely sliced on an angle
2 handfuls green beans, fresh or frozen
SAUCE:
1/3 cup hoisin
2 Tbsp soy/ tamari sauce
2 Tbsp maple/brown sugar
Chilli oil and fresh coriander to garnish (optional)
MAKE the sauce, mix all ingredients together with a fork in a small bowl, and set aside.
COOK the noodles in a large pot of boiling water, following the packet for cooking instructions. Reserve 1/3 cup of the cooking water for later.
HEAT a large heavy-based pan on medium to high temperature , add the peanut or sesame oil, pork mince and garlic, stirfry until browning and cooked through (8-10 mins), use a wooden spoon to break up the mince and stir often.
ADD the finely sliced broccoli, celery, and green beans to the pork mince, toss together to cook for 5 minutes until tender, while still having a bit of a crunch.
ADD the sauce and 1/3 cup of the noodle cooking liquid to the pan and stir to combine, make sure the temperature is hot enough that the liquids are bubbling.
ADD noodles and mix together with tongs until noodles are evenly coated in the sauce.
REMOVE from the heat and serve immediately.
DRIZZLE with chilli oil and a scatter of fresh coriander and serve.

** for gluten free friends, swap egg noodles for wide flat rice noodles!
