Bounty Bites

If you love coconut and chocolate like I do the you will ABSOLUTELY love these! They make for a great healthy dessert when you don’t want something too sweet.

While I love dark chocolate, I find this recipe works best with 62% chocolate.  It’s milder flavour compliments the coconut without being too intense or overpowering.

Gluten-free, dairy-free, vegan.

Ingredients

250g desiccated coconut

1 ¼ cups coconut milk

⅓ cup + 5 tbsp melted coconut oil

¼ cup + 1 tbsp maple syrup (or raw honey)

3 tsp vanilla bean paste

330g 62% dark chocolate

Optional Garnishes:

Chopped pistachios, freeze-dried raspberries, or desiccated coconut

METHOD:

  1. Mix Coconut Layer: Combine coconut, 1 cup of coconut milk, ⅓ cup of coconut oil, maple syrup, and vanilla in a bowl. Mix well.

  2. Layer & Freeze: Line a 20 x 24 cm tin with baking paper. Press half the coconut mixture into the tin. Freeze while making the ganache.

  3. Ganache Layer: Melt 80g chocolate with ¼ cup coconut milk in the microwave (30-second intervals). Spread over the coconut layer and let it sit for 1 minute to slightly set.

  4. Add Top Layer: Spread the remaining coconut mixture evenly over the ganache. Flatten with the back of a spoon and freeze until firm (minimum 1.5 hours).

  5. Melt Chocolate: Melt the remaining 250g chocolate with 5 tablespoons of coconut oil in 30-second intervals until smooth.

  6. Cut & Coat: Remove the slice from the freezer and transfer it to a chopping board. Cut into 4 cm x 4 cm squares (24 pieces). Using two forks, dip each square into the melted chocolate, ensuring all sides are evenly coated. Gently tap off excess chocolate by holding the square on one fork and tapping the fork against the bowl.

  7. Garnish & Set: Sprinkle with garnishes (if using) and freeze for 30 minutes to set.

  8. Store: Keep in the freezer for up to 1 month or in the fridge for up to 5 days! 

NOTE:

To make bars: If you’d like to turn these into thin bars, first cut the 20 cm x 24 cm slab in half to create two 10 cm x 24 cm pieces. Then, slice each piece into 2 cm wide bars. Dip each bar in chocolate and garnish as desired.

And just like that, you’ve got a delicious sweet treat ready whenever you are. These bites can be stored in the freezer for up to 1 month or will keep in the fridge for up to 5 days.
