Greek Fries with Garlic Oil, Feta & Oregano

Crispy, golden fries tossed in garlic infused oil, topped with salty Greek feta and fragrant oregano.

This easy-but-elevated dish hits that sweet spot between breezy summer snacking and cozy, comfort food goodness. The recipe may be simple, but the flavour pay off is insane! The secret? Garlic oil and lots of it! Paired with good potatoes, great feta, and flaky salt - you can’t go wrong with this combo!

Here’s what you’ll need to make enough for 4.

Ingredients

1.2 kg potatoes, washed

½ cup olive oil

4 garlic cloves

80g Greek feta

1½ tsp dried oregano (or swap for Za'atar for a Turkish-inspired twist!)

2 tbsp flaky sea salt

½ lemon, to serve

Here’s what you need to do:

  1. PREHEAT your oven to 200°C and place a large baking tray in the oven to heat.

  2. PEEL the garlic cloves and smash them with the side of a knife. Heat olive oil and garlic in a small pot over medium-low heat for 15-20 minutes to infuse the oil.          

  3. SLICE potatoes into 1 cm (½ inch) thick fries. Place fries in a pot, cover with water, and bring to a boil. Reduce to a simmer for 8-10 minutes until just tender. Drain your potatoes.

  4. SPREAD the potatoes on the hot baking tray. Drizzle with garlic oil and add the smashed garlic cloves.

  5. SPRINKLE with 1 tbsp flaky salt and toss to coat evenly. 

  6. BAKE for 30 minutes, flipping halfway through, until golden and crispy.

  7. REMOVE fries from the oven and sprinkle with remaining salt, oregano (or za'atar), and crumbled feta. Transfer to a serving bowl and toss gently to coat evenly. Serve with a squeeze of lemon.
