Can we talk about entertaining for a second?

Because I asked you guys about it last year and the responses were very telling:

“It's intimidating”
“It's so much effort”
“I never get to enjoy it because I'm stuck in the kitchen”
“I'm worried what people will think of my food”

And honestly… this is fair.

 Because we've somehow made “having people over” feel like a full production.

When really… it doesn't need to be.

So, what I'm loving right now is how easy entertaining becomes when you remove the pressure.

Like… radically easier.

I had friends stay the night recently (on a school night, no less), and I wanted it to feel nice… but I absolutely did not have hours to prep or the energy to spend the whole evening cooking.

So I kept it simple.

And it worked.

So just let’s make:

One Starter - Harissa Roasted Tomatoes on Labne with Sourdough

One-dish-wonder Main - Mexican Chicken Bake with Avocado + Herbs

One Special Drink - Cocount Margarita with 1800 Tequila

One Sweet Treat - Choc Coated Nut Butter Stuffed Dates

The best part? The whole menu only requires about one hour of power prep (including setting the table and getting your cocktail cart ready).

You could even knock it all over the morning before if you wanted. Then, once your guests arrive, all you've got to do is pop the chicken bake in the oven, assemble the starter and shake a cocktail. That's it.

The rest is done, so you can actually relax, pour yourself a drink and enjoy your guests instead of being stuck in the kitchen.

So if you've been putting off having people over because it feels like “too much”…

 This is your permission slip to make it easy.
